There's a fascinating chess variant out called Tile Chess.  It's multiplayer; the set comes with enough pieces for six people, but I suppose one could have any number.

Oh, and there's no board.

Players take turns placing their chesspieces down adjacent to whatever pieces have already been placed.  Once the game begins, all the pieces must be adjacent to one another at the beginning and end of a turn.  That is, a bishop can move diagonally through space, but must end up adjacent to a piece.  It's seriously bizarre at times, since, if you have two groups of pieces connected by a line of pieces, and two opposing pieces face each other in the middle of the line, they can't capture one another because that would disconnect the two groups...

It's freeform, it's versatile, pieces can be invented in the middle of the game so that every player gets one...

...Though it might be some work to track, or at least display.
