The reason I keep proposing MIME as an exception is that I think it would
be nice to have something like, in .mh_profile,
mime_path: mail/config.mime
and in config.mime (where this is obviously pseudo-formatting):

type audio/mp3 {
  showproc: $DISPLAY ? xmms : mpg123 
  mhstore_dest: ~/music/new
  prompt_before_show: true
}

type text/plain {
  showproc: $PS1 ? less : cat
}

...
